The LMW glutenins are involved in various allergies to wheat. We compared the IgEreactivities and secondary structure contents of whole recombinant glutenin, its repetitive N-terminal and non-repetitive C-terminal halves alone, and the mixed halves. The two halves interacted in whole protein or in mix : IgE-reactivity and β strand increased. This could favor epitopes presentation.
