Abstract
Health organizations now recommend diversifying and increasing our dietary intake of ω3 polyunsaturated fatty acids (PUFA), which are essential for the proper functioning of our cells. To meet these recommendations, plant membranes, and in particular photosynthetic membranes, show a real potential, as they contain galactolipids, whose hydrolysis by enzymatic reactions mainly provides ω3 PUFA such as α-linolenic acid. The results obtained in this research work provide a better understanding of the mechanisms involved in the enzymatic digestion of these plant lipid and membrane assemblies. It also paves the way to the development of sustainable plant-based food alternatives, that can improve the uptake and bioaccessibility of essential nutrients such as ω3 PUFA.
