Abstract
This article presents a study using two types of microscopy techniques and the mass spectrometry of 13- carbon (13C-IRMS) to identify the adulteration of honey by industrial sugar syrups. We present here an approach to detect fraud in honey by simple methods, that consist in seeking tracers (cellular or molecular) of the specific adulteration. We show that optical microscopy is more sensitive than the IRMS to detect fraud (by about 2% and 7-10%). While optical microscopy is limited to the search for cellular elements of adulteration and IRMS gives its best results for a certain type of industrial syrups, we have highlighted the possibilities of electron microscopy in the detection of industrial syrups with no tracer cell.
