In the economic literature, globalisation is often perceived as a cross-cultural homogenisation of food consumption behaviours. Despite this too simple approach, some national or regional patterns of food consumption can still explain the formation of preferences. The aim of this paper is to specify the emerging preferences within a theory of demand for seafood products through a socio-economic analysis. A generation effect seems to reduce over time French demand for fresh fish. Can the phenomenon be considered as a mere effect of globalisation?
