Abstract
The aleurone layer is an histological tissue of the wheat seed located between the endosperm and the outer layers. It is with the embryo the only living tissue of the wheat seed and it plays a role in the embryo development during germination. It is a storage place for metabolites and it allows the synthesis and secretion of hydrolytic enzymes that produce nutrients for embryo growth. Besides, it ensures embryo safety with its highly resistant cell wall structure. The aleurone layer is a complex tissue that contains high concentrations of interesting nutritional molecules. The aim of this review is to collect data concerning the aleurone microstructure and biochemical composition for the development of new technologies adapted to the aleurone nutrients valorisation.
