ABSTRACT IN FRENCH: Cette contribution propose d'étudier une des formes particulières de la stratégie de développement de l'entreprise artisanale: le développement incrémental. Celui-ci consiste à s'inscrire dans une démarche continue et globale d'innovation en s'appuyant sur les savoir-faire traditionnels. Le développement incrémental conduit à reconsidérer l'entreprise pour mieux renforcer ses domaines d'excellence et améliorer les marges, sans nécessairement accroître le chiffre d'affaires. Sur le plan méthodologique, ce travail s'inscrit dans les réflexions menées par le « club des dirigeants Languedoc-Roussillon ». La présentation s'attachera à situer en premier lieu le cadre de la recherche en présentant le processus d'émergence de la problématique. Dans un deuxième temps, la méthodologie retenue sera argumentée et enfin les résultats obtenus seront analysés du point de vue à la fois opératoire et académique. // ABSTRACT IN ENGLISH: This paper studies one of the specific forms of the handicraft business development strategy: incremental development. Incremental development means adopting a continuous and overall approach to innovation, relying on traditional know-how. This leads to a reassessment of the business to better enhance its areas of excellence and improve its margins without necessarily increasing the turnover. Methodologically speaking, this paper falls within the ambit of reflections conducted by the Languedoc-Roussillon managers'club ('club des dirigeants Languedoc-Roussillon'). First, the research framework is set up presenting the emergence of the problem. Then, the methodology chosen is discussed and finally the results are analysed from both an operating and an academic point of view.
