The domain Le Songe de Don Bosco is located in La Crau in the Var, at the heart of the Côtes de Provence appellation. It has 86 hectares of vineyards under organic agriculture. To continue its environmental commitment, the domain wished to study the feasibility of obtaining a new environmental certification, the HVE certification. For this certification considers other parameters than organic agriculture, one of which, the biodiversity on the farm. This study shows that the domain meets all the requirements to obtain the HVE certification for the 2024 vintage. The implemented experimentation allowed us to see the impact of bio-acidification on a rosé wine. The use of the yeast Lachancea thermotolerans showed a strong production of lactic acid leading to an increase in total acidity and a decrease in pH. This yeast also allowed a decrease in the Alcohol by Volume (ABV) of the wine. Sensory analysis confirmed the impact on the yeast on the different analytical parameters during tasting. However, it was impossible to determine if the yeast impacted the wine's aromatic profile.
