"André Brunel – Les Cailloux" winery in Châteauneuf-du-Pape is a full growing business, with newly planted plots, start of fresh harvest purchasing in 2021 and the extension of the cellar in 2022. In order to anticipate the rising of the volume of red wine to vinify, Romain Pitaud decided to turn towards a new technology with very promising commercial arguments, the R-Pulse®. Maintain of quality and time-saver compared to traditional pump-overs are the mainly shown advantages. Point of this training was to, via a double study, quality-wise and economy-wise, to assess the veracity of the arguments introduced by the manufacturer. Through the polyphenols and sensorial analysis, trends have been identified. Comparison of the real time needed to accomplish pump-over operation allowed to settle on time saved, and thus money saved, with the help of the R-Pulse® technology.
