The Ormarine cooperative winery is ideally located in the heart of Hérault, on the edge of the “Etang de Thau”. Under the direction of Cyril Payon, this winery is renowned for its specialization in producing AOP Picpoul-de-Pinet white wines, a well-established reputation in the Hérault region. Adverse weather conditions marked by significant drought, low rainfall, and increased attacks by pests such as Eudémis and Cryptoblables have been noted in the Pinet vineyard. The objective of my trial was to determine the organoleptic impact of static settling and flotation settling during white Piquepoul vinification. The protocol of my experimentation involved vinifying three series of one vat using static settling and another vat using flotation settling. The tasting results highlighted significant differences: static settling imparted an appealing complexity and balance to the wine, while flotation settling emphasized freshness and increased aromatic intensity. From a practical standpoint, flotation settling allows for quick release of settling tanks, providing a time management advantage. The economic differences between the methods are minimal. These results suggest considering the creation of varied profiles, offering a range of options to the winery's customers during blending sessions.
