Résumé
This thesis, submitted for the National Diploma of Oenology at the University of Montpellier, was conducted at Château La Roque within the Pic Saint Loup appellation area during the 2023 vintage. It presents a detailed study on the impact of terroir on the quality of Syrah wines. The research focused on analyzing two plots of the same grape variety, each with distinct soil characteristics and microclimates, to compare their influence on fermentation kinetics and the organoleptic profiles of the wines. The findings highlighted significant differences in chemical composition and sensory characteristics (aromatic and taste profiles), underscoring the importance of terroir in expressing the unique qualities of the wines. Additionally, the vineyard's adoption of biodynamic viticulture practices also contributes to the complexity and authenticity of the wines produced.
