Résumé
This thesis is presented in the context of obtaining the National Diploma of Oenologist and took place at Mas Cal Demoura, in the Terrasses du Larzac during the 2021 vintage. Carignan noir is one of the emblematic grape varieties of the appellation. Known for producing powerful and generous wines, it is however often associated with its age. Indeed, Carignan, when young, is very often associated with bitter, herbaceous wines with hard tannins. It is to try to change these preconceptions that this study was conducted. For this, two plots were compared, one planted in 1962 and the other in 2017. The young plot is the result of a massal selection of the first one. An agronomic follow-up was carried out, then the same protocol was carried out during the vinifications. 17 judges performed the tasting of the two modalities. The two wines were perceived as different but neither was preferred over the other. Similar profiles were noted. The organoleptic profile of the plantier was found to be more intense in color and aroma, as well as more persistent than the old Carignan plot. This experimentation could be continued over several years in order to ensure the regularity of the results on the estate but also in various locations in order to avoid the effects of vintage, terroir, plant material and climate.
