Résumé
Guizard domain is a family estate located in Laverune, west of Montpellier on the territory of the protected origin designations Languedoc, Grès de Montpellier, Saint Georges D'Orques. The vineyard is organic and the wines are HVE 3 certified. Wine production is divided into three colors, rosé, white and red. In a spirit of diversification, after having already experimented with the production of white wine without sulphites, the domain wanted to try to produce a new color, an orange wine. For this experiement, three modalities were set up; a classic sulfited control, a biocontrol modality with KTS FA, a product based on chitosan, and a bioprotection modality with the Saccharomyces cerevisiae yeast VitiSansation. Unfortunately, the April 2021 frost forced the estate to conduct the experiment on a smaller volume and with another grape variety. Therefore, the result obtained has'nt been satisfaying. Experimentation has shown that sulfites are the simplest way to protect wines against oxidation and unwanted microbial developpements. However, sulfites also have defects (allergic risks, aromatic mask, feeling of hardness, and so on and so forth), thaat's the reason why, used in good conditions, alternative solutions are a good complement to reduce the doses of sulfites in order to satisfy the consumers looking for healthier and more natural products. Other winemaking trials, about no sulfited wines and orange wines will be carried out in order to bring new wines giving pleasure to the people who drink them.
