Digestive diseases are a major public health concern in France and worldwide. The aim of this thesis is to focus on Irritable Bowel Syndrome (IBS), which remains an etiological enigma with a steadily rising incidence and prevalence. FODMAPs, poorly digested and fermentable osidic structures, have been identified as one of the main sources of symptoms in this pathology. The aim is to assess the potential efficacy of hydrolases, the enzymes that degrade these sugars, in improving symptoms, whether digestive or extra-digestive. This holistic approach, combining nutrition, digestive physiology and personalized medicine, opens up new therapeutic avenues. The aim here is to clarify the fundamental mechanisms governing the interaction between FODMAPs and intestinal physiology, while examining the role and benefits of hydrolases in beneficially modulating these interactions.
