Little considered by the general population because of their unattractive appearance, offals are an interesting nutritional source. Theycontain many nutrients (vitamins, minerals, trace elements), and they can also be a protein supply solution for the elderly or for people who suffer from dental disorders. However, their consumption can be risky: pregnant women, patients with gout attacks, and patients with cardiovascular disorders should moderate their consumption.This thesis describes the offal’s story from the Middle Ages to the present day, and it provides information on the benefits and harms of their consumption.
