Domaine Arnaud Lambert is a wine-estate located in Maine et Loire (49) in the communes ofSaint-Cyr en Bourg, Brézé and Montsoreau. The estate extends over 57 hectares of vinesconducted in organic farming with an opening to Biodynamics. Within the estate are the SaumurRouge, Saumur Blanc, Saumur Champigny and Crémant de Loire appellations. The grapevarieties planted are Chenin in white and Cabernet Franc in red. A small part of Chardonnay isplanted for the production of Crémants de Loire.My expériment consisted in studying the influence of the tips rolling on the growth of the vine atdifferent phenological stages and on the organoleptic aspect of the finished wine. Variousanalyzes were carried out in the vineyard. The organoleptic impact was assessed throughtasting. The results obtained were significant and conclusive, wines from the rolled modalitywere perceived as less astringent and less acidic.
