Braiding and high trimming are increasingly common in the French wine industry. At the same time, global warming is becoming an unavoidable phenomenon that heralds upheavals for which it is important to prepare. In order to evaluate the relevance of trellising practices in the context of global warming, the domaine Jacques Prieur is conducting a 3-year experiment in collaboration with the Chambre d’Agriculture de la Côte d’Or. The aim of this research is to determine the impact of braiding, 1.60 m and 1.30 m trimming on the development of the vine, the ripening of the grapes, as well as the balance of the musts and the wines produced from the Chardonnay grape variety. This report deals with the results obtained in 2021, the second year of the research. They mainly concern the viticulture part, as the severe frost episode that occurred during this vintage did not allow the 3 methods to be vinified independently. However, this work was able to benefit from the lessons learned from the first year of research, which allowed comparisons to be made and a sensory analysis to be made of the wines produced in 2020 by modality. Compared to the 1.30 m trimming, traditional in Burgundy, the braiding and the 1.60 m trimming seem to have led to an increase in yields and nitrogen content (plant and must). On the other hand, these trellising methods are associated with a degraded sanitary state, a higher hydric stress of the vine and a significant increase in working time. The sensory analysis also shows that the wine produced by braiding is recognisable and less appreciated by tasters. In view of these results, braiding and 1.60 m trimming do not seem to be the most suitable management methods in the context of global warming. The very specific climatic conditions of the 2021 vintage invite us to remain cautious about these results, even if they seem to be consistent with those from the 2020 work carried out under very favourable climatic conditions. In this context, the continuation of the study over a third year seems very relevant.
