Résumé
This final year dissertation reports on a four-month work placement at Domaine de Sainte Marie in the Jura. It describes the organisation of the company, its viticultural practices and its collection of grape varieties, its winemaking methods and the experimental trials carried out on site. From the very first days, I realised that working in a small structure meant I could do more varied work. It's a family business with just 4 permanent employees in the office and 3 in the vineyard. During this work placement, I was able to look after the vines, take part in the harvest, check the vats and make sure they were fermenting properly. What I soon got the chance to do was to lead cellar tours and tastings. It was a real pleasure and I could do it in French as well as in English. Vin Jaune is a typical wine of the Jurassien vineyards, so a study of maturing under sail was of interest. As far as my experiment was concerned, my study focused on the impact of the level of settling on the final composition of the Savagnin for ageing under sail.
