The internship is done at Vignoble Dom Brial, a large cooperative winery located in the Roussillon region. The cellar has a total of 220 cooperators for 1768 hectares to cultivate. It produces a wide range of white, rosé, red and natural sweet wines.The rosé wines produced in the south seek to have a very pale color to suit the demands of consumers. For this purpose, various means of vinification are used, including the use of PVPP. The experimentation will focus on the reduction of this PVPP which is a synthetic product and not authorized in the bio. To do this, we are using FM 2, a product developed by the IOC, which is composed of specific inactivated yeasts coupled with PVPP in order to significantly reduce the doses of PVPP used. These trials have allowed us to conclude that the two products used are very similar, especially from a visual point of view in terms of color nuances, with even advantages for certain aromatic points in wines vinified with FM 2.
