Résumé
This report presents the work carried out as part of an internship between the two years of the national diploma in oenology program at Montpellier. This internship was conducted from July 21, 2023, to November 18, 2023, at François Martenot, located in Meursault, belonging to the Grands Chais de France group. This thesis presents the use of the NomaSence polyscan and its technology to characterize the optimal harvest date, in order to address the current oenological issue. This issue concerns the gustatory profil of red wines, described as unbalanced with a wrong tannic structure. The work carried out aims to characterize a simple maturity indicator and to determine, based on this, an optimal harvest period to meet oenological objectives. As a future oenologist, elements of understanding and perspectives for improvement will be provided.
