Vinification Saccharomyces cerevisiae Moût Alcoométrie Chardonnay (Cépages)
The viticulture and winemaking industry is facing major challenges related to climate change, with rising temperatures and extreme weather events. These phenomena have tangible impacts on the vine, affecting its phenology, grape characteristics, and viticultural practices. In this context, Maison Louis Jadot, in collaboration with Biolaffort Laboratories, is conducting a study on the use of new strains of fermenting yeast to mitigate these effects. This experimentation, carried out on Chardonnay must, aims to compare the BLFSC20 yeast to the CFX9 control yeast. The internship conducted at Maison Louis Jadot focused on vine growing and winemaking. Finding solutions to acidify wines and reduce alcohol content (TAV) is a major challenge for adapting the industry to climate change. By leveraging innovation and research, Maison Louis Jadot is sustainably committed to preserving the quality and identity of Burgundy wines in the face of current climate challenges.
