The subject of this dissertation is the comparison between a traditional pump-over system anda pump-over system using R'Pulse technology. The first section focuses on the viticultural aspect ofChâteau Castera while Section II focuses on the winemaking process and Section III on theexperiment itself.The particularity of the 2021 vintage was a strong cryptogamic pressure and a relatively lowmaturity of the grapes during the harvest. The wines underwent a classic vinification with only thepractice of pumping over differing. The results are based on a cost study and a sensory analysiscarried out after tasting by a jury. Although the "R'Pulse" method is largely more economical bothfinancially and in terms of means, the tasting indicates a less fruity wine, with more tannins and amore drying aspect in the mouth.However, these data must be qualified, as the two wines are relatively close in sensory terms.Moreover, as the harvest was not at optimal maturity, we can ask ourselves the question of anaccentuation of the vintage effect by the R'Pulse pumping-over and the need to reason the pumpingoverprogram to fight against this over-extraction of tannins. To answer this question, the experimentmust be repeated over 5 years. Moreover, as there are no replicates, a second experiment should beset up to confirm these results.
