Résumé
The presentation has for aim to introduce the session around “Innovations in theanalysis of wheat quality: technologies and methodologies”. We will evaluate what isincluded in the term “quality” and the difficulties we have to face in order to take it intoaccount. We will briefly pinpoint the different methodologic improvements and thedifferent strategies to increase our understanding of wheat quality and will try toillustrate with chosen examples recent effort or results to evaluate the different traits ofquality from the grain to the plate. We will resume the talk by tracing some futurechallenges.
