Résumé
Pectin extraction has been extensively studied; however, in response to today’s sustainability demands, new extraction processes are essential. This study aims to develop an alternative pectin extraction method using deep eutectic solvents combined with grinding, designed to preserve pectin’s structural integrity and gelation capacity. Understanding the impact of each extraction parameter is a key objective, enabling further optimization of the process.
