The increasing global demand for virgin olive oil poses considerable environmental challenges for the international olive oil sector, as environmentally harmful by-products are produced every year during oil extraction. These by-products have a negative impact on waterways, air, soil and groundwater and are expensive to dispose of. In this context, the biorefinery seems to be a promising solution for the management, processing and valorization of olive oil biomass in the Mediterranean region. This research aimed to drive the transition of the Moroccan olive sector towards a circular bioeconomy by implementing a zero-waste strategy that minimizes environmental damage and creates added value. This study focused on the recovery of hydroxytyrosol (OHT), a known bioactive compound, from the olive mill's two-phase pomace by combining a simple extraction scheme with a membrane separation process.
